Food Philosophy

How does one define Canadian Cuisine? In a young country such as ours, built upon the merging of cultures, this becomes a difficult question to answer. To Erik, Canadian Cuisine is best described as the convergence of local food producers, farmers and artisans; using the land and waterways to cultivate products that represent them. He prides himself on using food from local farmers and producers from across the region, and across the country. From his current home near Vancouver to his homeland in Nova Scotia, each coast has an abundance of products to offer from both land and sea, so long as they are treated with respect.
